Consider a Mini Pre-shoot
If you're still having a difficult time deciding which photographer to utilize, you might hire your favorite prospects for a mini shoot. You can invite them to join you at the bridal shop for a wedding dress fitting and have them take photographs during the fitting, both posed and candid. You'll then view the photos taken at the fitting and will have a better idea of whom chose. A mini pre-shoot also allows you to interact with the photographer on a 'working' level to see if personalities are compatible.
Engagement Portraits
Many photographers nowadays will probably include engagement portraits as part of their package. Ask him or her if you can have an engagement shoot without being locked into a contract to get first hand experience at their work. This is an excellent way to see if you like their style, personality, and quality of work.
Does the photographer seem to know what he's doing?
Does he act confused about his equipment?
Does he do a good job at helping you understand the poses he wants and speak clearly?
Does he take control but yet make you feel comfortable?
Does he seem to enjoy what he's doing?
